Cinnamon Raisin Buns

Ingredients:

DOUGH
  • 1 cup milk
  • 2 eggs, slightly beaten
  • 1 tsp salt
  • 1/2 cup sugar
  • 1/4 cup butter, room temperature
  • 4 cups all-purpose flour
  • 2 1/2 tsp bread machine yeast

FILLING
  • 1/3 cup butter, softened
  • 1 cup brown sugar
  • 1 tbsp cinnamon
  • 3/4 cup raisins

ICING
  • 3 oz cream cheese
  • 3 tbsp butter, room temperature
  • 1 cup confectioner’s sugar
  • 1 tsp vanilla extract
  • 1 pinch salt

Directions:

1. At the end of the Dough cycle, remove the dough from the breadmaker. Press and hold the START/STOP button for several seconds to end the cycle.

2. Place on floured counter and let the dough rest for 10 minutes

3. Roll dough to a large rectangle.

4. Spread with softened butter.

5. Mix the brown sugar and cinnamon and then sprinkle over butter. Scatter the raisins over the butter and sugar.

6. Roll up dough from the longest side.

7. Cut into rolls about 1/2-inch thick.

8. Place in a greased 10- x 14-inch baking pan.*

9. Cover and let rise until almost doubled, about 1 hour.

10. Bake at 375 degrees F for 20 to 25 minutes, or until done.

11. Let cool slightly, then ice.

12. Icing: Combine the cream cheese, butter, confectioner’s sugar, vanilla and salt.

Servings: 16

Tip: Can also use a 9- x 13-inch baking pan plus a 9- x 5-inch loaf pan.
