The Playa del Carmen Cocktail

This cocktail was inspired by a drink that Pat, our Test Kitchen Manager, tasted while on vacation in Mexico. With the help of Kristel, our blog author who did a stint as a bartender in college, the only thing Pat likes better about the original was that it was served poolside in Playa del Carmen.


  • 1 large orange, peeled
  • 1 medium lime, peeled
  • 1 medium lemon, peeled
  • 1-inch thick slice fresh pineapple
  • 1 1/2 ounces coconut rum
  • 1 ounce blue curacao


  1. Cut orange and lemon as needed to fit through the chute of the juice extractor.
  2. Juice the orange, lemon and lime; set aside. Juice pineapple
  3. Fill a cocktail shaker with ice. Add 1/4 cup each citrus mixture and pineapple. Pour in rum.
  4. Shake and pour into a glass. Add ice, if desired. Pour blue curacao over top and let gradually mix into the drink. Serve immediately. Repeat for second drink.

Serves: 1-2
