Creamy Mixed Melons
- 1/4 small ripe cantaloupe, peeled and cut into quarters
- 1/4 small ripe honeydew, peeled and cut into quarters
- 1 cup well-cooked brown rice
- 1/2 cup ricotta cheese
- Assemble processing bowl with puree/chopping blade.
- Place melons, cooked brown rice, and ricotta in bowl. Puree and serve.
- Refrigerate remaining mixture in storage containers.
Makes: 2 cups
