- Two 14.5 oz cans no salt added diced tomatoes, one can drained, one can undrained
- 1 small onion, chopped
- 2 medium zucchini, cut into ½ inch cubes
- 2 garlic cloves, peeled and crushed
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ cup long grain brown rice, uncooked
- ½ cup fat free reduced fat chicken broth
- 2 teaspoons balsamic vinegar
- ½ teaspoon salt
- ½ teaspoon freshly ground black pepper
- ¾ cup reduced fat feta cheese
- Place tomatoes, onion, zucchini, garlic, oregano, basil, rice and chicken broth in slow cooker and stir to combine.
- Cover and cook on HIGH for 5 hours or on LOW for 7 hours.
- Add balsamic vinegar, salt and pepper. Stir to combine.
- Sprinkle with crumbled feta cheese and serve.
Serve as a healthy side dish with lean grilled chicken or pork. Nutritional Information:
