North Carolina Pork Barbecue for 5-6 Qt. Slow Cooker

Ingredients:

  • 1 pork butt, shoulder or blade roast (3 to 4 lbs.)
  • 1 can (15 oz.) whole tomatoes
  • 1/2 cup vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon sugar
  • 2 teaspoons crushed red pepper flakes
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Directions:

  1. Combine all ingredients in slow cooker.
  2. Cover and cook on HIGH for 5 hours or LOW for 10 hours.
  3. Pork is done when it falls apart if lifted with a fork. Remove meat and discard bone.
  4. Dice or shred meat with a fork. Serve with sauce meat was cooked in or other barbecue sauce. Serve on Carolina-style buns with coleslaw.
