Turkey Meatloaf

Ingredients:

Recommended Hamilton Beach® Product:

Slow Cooker

1 medium onion
2 tsp. olive oil
1 c. chopped onion
2-1/2 lbs. ground turkey
½ tsp. salt
½ tsp. pepper
¼ tsp. dried thyme
2 Tblsp. Worcestershire sauce
2 Tblsp. ketchup
2 eggs
22 saltine crackers, crushed

Glaze:
¼ c. ketchup
2 Tblsp. brown sugar
1 Tblsp. vinegar

Directions:

Slice onion into thick slices and line bottom of crock with slices. This will make it easier to remove the loaf after cooking. In a skillet over medium heat sauté onion in oil until softened. Combine onion with remaining ingredients, except for glaze ingredients. Mix well. Pat into a loaf shape to fit your crock. Place loaf into crock on top of onion slices. Use a rubber spatula to shape and “pull” loaf away from the sides of the crock. Combine glaze ingredients and spoon over top of loaf. Cover and cook on LOW for 6 to 7 hours or until meat thermometer registers 160 degrees.

Makes 6 servings.
