Grilled Shrimp With Herbed Feta Cheese and Brown Basmati Rice

  • 1 lb. large raw shrimp, peeled, deveined
  • 2 teaspoons extra virgin olive oil
  • Freshly ground pepper
  • 3 oz. reduced-fat feta cheese, crumbled
  • 2 tablespoons fresh oregano leaves
  • 1 15 oz. can diced tomatoes
  • 2 cups brown basmati rice
Directions
  1. Preheat grill. Toss shrimp with olive oil and freshly ground pepper to taste.
  2. Cook brown basmati rice according to package directions, omitting the salt and butter or margarine. Keep warm.
  3. In food processor, process oregano and feta cheese just until cheese is coarsely chopped and combined with oregano. Set aside.
  4. Place diced tomatoes in microwave safe bowl and heat on high for 1-2 minutes or until hot. Keep warm.
  5. Grill shrimp for 2-3 minutes until pink – do not overcook.
  6. To serve, top rice with diced tomatoes, grilled shrimp and feta and oregano mixture.
