Chipotle Turkey Barbecue

4 lbs. bone-in turkey; drumsticks, thighs or wings*
7-ounce can chipotle peppers in adobo sauce
1/3 c. cider vinegar

*Some turkey drumsticks are too long to fit in the 4-qt. slow cooker, so use small legs.

Directions

Place turkey in crock of a 4-quart slow cooker.

Remove peppers from adobo sauce and coarsely chop.

Mix peppers, adobo sauce and vinegar.

Spread over turkey.

Cover and cook on LOW for 8 hours or until meat falls off bone.

Remove turkey from crock.

Shred meat, discarding skin and bones.

 

Serve with your favorite barbecue sauce on buns or on tortillas topped with salsa.

Makes 1-1/2 lbs. or 6 servings
