Beef & Black Bean Chili

Slow Cooker - 6 or 7 Quart Size, 3-in-One Slow Cooker - 6 Quart Size
  • 2 1/2 pounds lean ground beef
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 2 10 oz. cans Ro*Tel® diced tomatoes with Green Chilies
  • 3 tablespoons tomato paste
  • 1/2 cup beef broth
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • Two 15 oz. cans black beans, drained and rinsed
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
Directions
  1. Sauté onion, red pepper and garlic in large pan until softened.
  2. Add ground beef and cook until no longer pink. Drain fat.
  3. Place meat mixture in slow cooker.
  4. Add diced tomatoes, tomato paste, beef broth, chili powder, cumin, and oregano to slow cooker. Stir to combine.
  5. Add black beans. Stir to combine.
  6. Cover and cook 4 hours on HIGH or 6 hours on LOW.
  7. Season with salt and pepper before serving.
