Rustic Brown Rice Provencal

Ingredients:

Party CrockEnsemble™ 3 Cup Chopper
  • Two 14.5 oz cans no salt added diced tomatoes, one can drained, one can undrained
  • 1 small onion, chopped
  • 2 medium zucchini, cut into ½ inch cubes
  • 2 garlic cloves, peeled and crushed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ cup long grain brown rice, uncooked
  • ½ cup fat free reduced fat chicken broth
  • 2 teaspoons balsamic vinegar
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ¾ cup reduced fat feta cheese

Directions:

  1. Place tomatoes, onion, zucchini, garlic, oregano, basil, rice and chicken broth in slow cooker and stir to combine.
  2. Cover and cook on HIGH for 5 hours or on LOW for 7 hours.
  3. Add balsamic vinegar, salt and pepper. Stir to combine.
  4. Sprinkle with crumbled feta cheese and serve.

Tip: Serve as a healthy side dish with lean grilled chicken or pork.
