Turkey Meatloaf

1 medium onion, thickly sliced 
2 teaspoons olive oil
1 cup chopped onion
2-1/2 lbs. ground turkey

2 Tablespoon Worcestershire sauce
2 Tablespoon ketchup
½ teaspoon salt
½ teaspoon pepper
¼ teaspoon dried thyme
2 eggs, slightly beaten
22 saltine crackers, crushed

¼ cup ketchup
2 Tablespoon brown sugar
1 Tablespoon vinegar


  1. Place sliced onion on bottom of crock.
  2. Heat oil in slow cooker stovetop-safe cookware or large skillet. Add chopped onions; cook over medium-high heat 2 minutes or until onions are tender.
  3. Mix onion with turkey, 2 Tablespoons ketchup, Worcestshire, salt, pepper and thyme in a large bowl until well blended. Shape into a loaf; place loaf in crock on top of onions.
  4. Stir remaining 1/4 cup ketchup, brown sugar and vinegar in a small bowl; pour over loaf.
  5. Cover and cook on LOW for 6 to 7 hours or until meat thermometer registers 160 degrees.
