Vegetarian Vegetable Soup

Ingredients:

Yield: About 4 quarts
  • 1 bottle (32 oz.) tomato plus vegetable juice
  • 1 can (6 oz.) tomato paste
  • 1 tablespoon chopped garlic
  • 1/2 cup frozen chopped onion
  • 2 bags (16 oz. each) mixed vegetables for soup or stew
  • 1 can (14 oz.) vegetable broth
  • 3 cups water
  • 1/2 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon sugar

Directions:

  1. Combine all ingredients in the crock. Stir well.
  2. Cover and cook on preferred setting: Low - 8 hours, High - 5 hours
