- 2 cups cornmeal
- 1 cup all-purpose flour
- 3 teaspoons baking powder
- 1 1/2 teaspoons salt
- 1 1/2 cups milk
- 1/2 cup water
- 1 egg, beaten
- 1 cup chopped onion
- Remove basket from fryer and heat oil to 375°F.
- In a large mixing bowl, combine corn meal, baking powder, salt, milk, and water. Mix in egg and chopped onion.
- Use a small ice cream scoop or teaspoon to carefully drop batter into preheated oil. Cook 8 or 10 at a time for 5 minutes or until golden brown. Turn occasionally for even browning. Remove from oil with a wooden slotted spoon, and place on paper towels to drain.
