Ingredients

  • 1 cup butter, softened
  • 1 1/3 cups granulated sugar
  • 1/3 cup packed light brown sugar
  • 2 large eggs
  • ¼ cup prepared triple strength coffee
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 2/3 cups baking cocoa
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup mini chocolate chips

Directions

  1. Heat oven to 350°F. Spray a 13x9-inch baking dish with nonstick cooking spray.
  2. With an electric mixer on medium-high, beat butter, granulated sugar and brown sugar until blended, about 2 minutes.
  3. Beat in eggs, coffee and vanilla until blended, about 1 minute. Gradually add flour, cocoa, salt and baking powder until blended, about 1 minute.
  4. Stir in mini chocolate chips. Spread into baking pan.
  5. Bake 25 to 28 minutes or until toothpick in center comes out clean. Cool completely and cut into squares.
