Ingredients

  • 3/4 pound boneless beef chuck roast, cut into 1/2-inch pieces
  • 1/2 pound sweet Italian sausage, casing removed
  • 2/3 cup chopped onion
  • 1/3 cup chopped green pepper
  • 2 teaspoons minced garlic
  • 2 tablespoons chopped canned green chilies
  • 1 can (28 oz.) diced tomatoes
  • 1 can (14 oz.) kidney beans, drained
  • 1 can (14 oz.) can pinto beans, drained
  • 1 can (6 oz.) tomato paste
  • 1 1/2 cups chicken broth
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Directions

  1. Set multi cooker to SEAR or SAUTE. Add beef pieces and sausage and cook until browned. Add onion, green pepper and garlic. Stir until onions are tender.
  2. Drain and add mixture back to multi cooker. Stir in remaining ingredients until well blended.
  3. Cover multi cooker and set to SLOW COOK HIGH for 4 to 5 hours or LOW for 8 to 10 hours.

Serves: 4-6

Test Kitchen Tip: If your multi cooker does not have a sauté or sear function, step 1 can be done on a stovetop.
