Spiralizer Pickled Radish and Carrot Salad

Ingredients

  • 1/2 cup white vinegar
  • 1/2 cup water
  • 2 tablespoons sugar
  • 1 teaspoon grated ginger
  • 1 teaspoon salt
  • 1/4 teaspoon dried crushed red pepper
  • 1 package (16 ounces)  radishes
  • 1 large thick carrot, peeled
  • 1/2 cup chopped cilantro 

Directions

  1. In a medium bowl, stir vinegar, water, sugar, ginger, salt and red pepper until sugar dissolves.
  2. Using a spiralizer, make spirals of radishes and carrot. Stir vegetable spirals and cilantro into vinegar mixture. Reserve any remaining vegetable spirals for another use.
  3. Cover and refrigerate overnight to blend flavors.

Serves: 4-6
